You can also try Fight Night Round 4, the previous installment, or even use an older emulator like PCSX2 to run any Fight Night game before Round 4 with low specs. If that does not work, sadly you cannot emulate FNC on RPCS3. For a simple game like this, you can probably run it with 4c/8t.
I use an 8700k, which is more than enough for the emulator. Simply enter the serial of your game into the program, and it will update it directly from PSN. This is a tutorial and link to an update tool for PS3 games. If none of that works, which it should, watch this: Depending on the region, go to configuration, settings, and change your console region to the appropriate one. If it starts with "BLES", then it is a European copy. If the serial number starts with "BLUS" it is an American copy. Remember to check the region of your copy. Up top are the settings I use which work flawlessly, perhaps better than on console.
